Jumping on the Springfree Trampoline is a fantastic workout, but to really enjoy your bounce time, you need to power up with healthy snacks! Gold medal Olympian, Rosie MacLennan, shared her favorite pancake recipe with us and we knew it was too delicious to keep to ourselves.

This recipe is so quick and easy that the whole family will want to help out. Enjoy these pancakes for a weekend breakfast that will give you a huge energy boost – which means more jumping!

Servings: 6

6 egg whites, beaten until fluffy

1/2cup/125mL low-fat cottage cheese or soy yogurt

1/2cup oatmeal, uncooked

1/4cup/60mL wheat germ

1/4cup flax seed

1tsp/5mL baking powder

1Tbsp/15mL grapeseed or coconut oil

1Tbsp cinnamon

1/2tsp vanilla

1scoop protein powder (optional)

1. Beat egg whites until stiff peaks form

2. Place all ingredients except beaten egg whites in a food processor and pulse or blend until mixture is uniform.

3. Pour blended ingredients into a bowl and add the egg whites. Fold until just blended.

4. Prepare a griddle with a touch of grapeseed or coconut oil. Ladle pancake mixture onto griddle and cook until both sides are browned.
